Welichu Wachu Industry Private Limited Company (WWIPLC) has been engaged in agro-industry by exporting green coffee beans and importing industrial, agricultural and construction inputs since 2017. Based in the Guji Zone and Uraga district, Welichu Wachu works with over 1,405 household coffee farmers and 9,731 families, supporting a community of 11,231 families who cultivate 2,171 hectares of coffee land. They hold organic certifications from EOS, NOP, and a verification for enveritas across eight peasant associations.

For more than four years, we have been working together with Welichu Wachu, sourcing organic-certified coffees for our blends and single-origin coffees. This peaberry natural specialty coffee comes from the Muda Tatesa region in the Uraga district, known for its exceptional natural coffee processing.

How it's roasted - a Peaberry

What is a Peaberry?
A peaberry is a unique type of coffee bean that forms when a coffee cherry contains only one seed instead of the usual two. This single seed is rounder and smaller, resulting in a higher density, which influences its flavor and roasting characteristics.

Roasting Process
Peaberry coffees with a screen size below 14 require a different roasting approach compared to larger beans. Due to their higher density, they demand a more delicate roasting technique.

1. Initial Stage: It’s crucial to put a lot of energy into the roasting drum to ensure that the heat reaches the core of these dense beans.

2. Monitoring the Roast: During the initial roasting stage and the browning phase, careful monitoring of the roast curve is essential. Since this is a natural coffee, the sugars on the beans may caramelize faster, which requires attention.

3. Maillard Reaction: As the roasting progresses into the Maillard reaction phase, the gas setting is lowered to control the roast further. Our goal is to achieve a longer and slower roast, which is particularly beneficial for espresso.
